Two-gress is not pro-gress!
I have to agree with the restaurant owner.

As a cooking school student, one of the things I want to do is increase the popularity of Haitian cuisine.

We have such good quality food but there has to be some healthy alternatives to how meals are prepared.

And I'm not talking about making major changes - I love me some grio and there's no way in hell I'm giving that up, but maybe tweaking it a little, like switching the oils, bump up some meatless alternatives, using fresher product, experiment more with roasting and grilling.

All the good stuff is there, and there is so much we can do with it!
